Ingredients:
2 quarts water
8 skinless, boneless chicken breast halves
1/2 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon garlic powder
2 tablespoons dried parsley
1 tablespoon onion powder
5 cubes chicken bouillon
3 tablespoons olive oil
1 onion, chopped
3 cloves garlic, chopped
1 (16 ounce) jar chunky salsa
2 (14.5 ounce) cans peeled and diced
tomatoes
1 (14.5 ounce) can whole peeled tomatoes
1 (10.75 ounce) can condensed tomato soup
3 tablespoons chili powder
1 (15 ounce) can whole kernel corn, drained
2 (16 ounce) cans chili beans, undrained
1 (8 ounce) container sour cream
Directions:

In a large pot over medium heat, combine water,
chicken, salt, pepper, garlic powder, parsley, onion powder and
bouillon cubes. Bring to a boil, then reduce heat and simmer 1 hour,
or until chicken juices run clear. Remove chicken, reserve broth.
Shred chicken.
2.
In a large pot over medium heat, cook onion and
garlic in olive oil until slightly browned. Stir in salsa, diced
tomatoes, whole tomatoes, tomato soup, chili powder, corn, chili
beans, sour cream, shredded chicken and 5 cups broth. Simmer 30
minutes.

beans combine to make a colorful salad with a light lime
vinaigrette dressing."
Ingredients:
5 tablespoons red wine
vinegar
3 tablespoons grapeseed oil
1/3 cup chopped fresh
cilantro
2 limes, juiced
1 teaspoon white sugar
3/4 teaspoon salt
2 cloves garlic, minced
1 (1 pound) package frozen
shelled
edamame (green soybeans)
3 cups frozen corn kernels
1 pint cherry tomatoes,
quartered
4 green onions, thinly
sliced
1 (15 ounce) can black
beans, rinsed and
drained
Directions:

In a large serving bowl,
whisk together the red wine vinegar, grapeseed
oil, cilantro, lime juice, sugar, salt and
garlic. Set aside.
2.
Bring a large pot of
lightly salted water to a boil. Add the soybeans
and boil for 3 minutes. Add corn to the boiling
water and continue cooking for 1 more minute.
Drain very well, and pour into the bowl with the
dressing. Gently mix in the cherry tomatoes,
green onions and black beans. Cover and
refrigerate for at least 2 hours before serving
to chill and blend the flavors.

sauce and brown sugar marinade, with hints of lemon and garlic, are the
perfect salty-sweet complement to rich salmon fillets."
Ingredients:
1 1/2 pounds salmon fillets
lemon pepper to taste
garlic powder to taste
salt to taste
1/3 cup soy sauce
1/3 cup brown sugar
1/3 cup water
1/4 cup vegetable oil
Directions:
1.
Season salmon fillets with lemon pepper, garlic
powder, and salt.
2.
In a small bowl, stir together soy sauce, brown
sugar, water, and vegetable oil until sugar is dissolved. Place fish
in a large resealable plastic bag with the soy sauce mixture, seal,
and turn to coat. Refrigerate for at least 2 hours.
3.
Preheat grill for medium heat.
4.
Lightly oil grill grate. Place salmon on the
preheated grill, and discard marinade. Cook salmon for 6 to 8
minutes per side, or until the fish flakes easily with a fork.

Ingredients:
3 avocados - peeled, pitted, and mashed
1 lime, juiced
1 teaspoon salt
1/2 cup diced onion
3 tablespoons chopped fresh cilantro
2 roma (plum) tomatoes, diced
1 teaspoon minced garlic
1 pinch ground cayenne pepper (optional)
Directions:
1.
In a medium bowl, mash together the avocados,
lime juice, and salt. Mix in onion, cilantro, tomatoes, and garlic.
Stir in cayenne pepper. Refrigerate 1 hour for best flavor, or serve
immediately.
